Freezer Meals


The freezer meal swap for October was wonderful. Days of not preparing a meal were enjoyed by eating other peoples delicious cooking!  The meals swapped were:

Chicken Cordon Bleu Casserole
Sausage and Bean Casserole
Baked Tortellini
Parmesan Chicken
Fast Chicken
15 Minute Mexicali Dinner

Hi Lori:

We meet once a month. I think you can read all about it here. Just click the freezer meal tab on the right side. We are meeting next Thursday at 10:30. You would need to bring 6 frozen meals and the recipe to swap. Your 6 would all be the same thing, and then you would take home 6 different meals. Each meal should cost 8-10 dollars. 5 of them would need 4 servings, and 1 meal needs to have 5 servings. How many servings would you need for your family? I find this saves me a lot of time cooking each month!

Received recipes are as follows:

Fast chicken
from Company's coming, main courses.
I did not receive it, just the reference.

Sausage and bean casserole.
Not received.
 
Chicken parmesan.
4-6 chicken breasts in a 9x13 casserole dish. Cover with a jar of spaghetti sauce, and sprinkle generously with parmesan cheese. Bake in the oven for 45 min, at 350. Makes a great sauce to put over spaghetti. Nice served with a side salad, and garlic bread. I froze it, and then it just needs to be thawed and cooked.
 
Chicken Cordon Bleu casserole.
Place 4-6 cubed chicken breasts, half a block of cubed swiss cheese, and chopped deli ham in a 9x13 casserole. Cover with a can of cream of chicken soup. Bake at 350 for 40 minutes. Serve over rice.
 
15 Minute Mexicali Dinner
Combine 1 lb. ground beef,
1/2-1tbs. chili powder.
1 med. onion chopped.
14 oz. tomato sauce
1/2 cup green pepper
12 oz. can kernel corn.
 Heat in the oven, then top with
 1 1/2 - 2 cups corn chips
1 cup grated cheese.
 Cover and put back in oven until cheese is melted.
 
Baked Tortellini.
 1.5 large packages of Olivieri Tortellini w/ beef
1.5 cans favorite spaghetti sauce.
1 package tex mex cheese (or grate your own)
 Preheat oven to 350.Cook tortellini according to package instructions. Drain then pour into greased 9x13 pan. Pour spaghetti sauce over tortellini. Spread the tex mex cheese over the top.  Bake uncovered for 30 minutes. Let cool a little, and cut into squares.  Enjoy with bread and maybe a salad.
